Omelettes are my new PASSION!
Eggs are free of points in the Weight Watchers program, so I often make omelettes for practically zero point meals, breakfast, lunch or brunch. Yum! Filling, satisfying, and so many options!
I’m actually LOVING cooking again. The whole process of cutting up tomatoes, onion, mushrooms, turkey bacon, or whatever I might have on hand, and the making and the designing of the omelette is really a delight to me, very pleasing and very fulfilling somehow. The bonus is…….by eating low point at one meal, I get to eat a high point meal sometime during my day!
Who would have thought?
